The journey of our Ceremonial Cacao Paste starts with the cacao tree, which is a vital part of the local ecosystem. The tree requires the shade of large native trees to thrive, and in turn, it contributes to the soil by keeping it humid and rich in nutrients. To ensure the correct balance of shade and sunlight, our farmers prune the trees with care and expertise, promoting a healthy soil and optimal cacao bean growth.

When the cacao pods are ripe, they are hand-harvested by the farmers. This is a delicate process, as the pods must be cut in such a way that they don't damage the tree and the next season's harvest. The farmers take great care in this process, as they believe that the energy and intention put into the harvest can affect the final product.

Once the pods are harvested, the beans are extracted from inside the fruit. The beans are then placed in wooden containers with the sweet white pulp and left to ferment for 3-5 days. After fermentation, the beans are sun-dried until they reach a perfect flavour state. The dried beans are then shelled, cleaned of impurities, and passed through a winnowing stage where the shells are blown away and the remaining cacao nibs are recovered.

In the next stage, the cacao nibs are ground into a thick paste, which solidifies as it cools down. Our suppliers maintain a close relationship with the farmers, providing sustainable farming courses and donations that help improve the living conditions of the farmers and their families.
